I like to eat the skin too, so little bake potatoes work for me anyway. I made a roast...Lady D - What a timely post for me. I made a roast chicken last night, and I put some Yukon Golds with it because the redskins at the store didn't look as good. The Yukons came in a colsed paper bag, so I couldn't really see them. I was so happy when they were all different sizes, dirty and some had eyes. I had to scrub them, and cut off some eyes & bad spots - Felt like real potatoes. <br />You are nuts. But I agree with you. And we both know I'm nuts, too.
